anCnoc
anCnoc 24 Years Old
The story of the Knockdhu distillery starts with a man of vision (who also had an eye for a good investment). In 1892 an enterprising chap named, John Morrison, bought the Knock estate. The surrounding land was full of peat and barley and the Great North Railway line ran nearby. So when springs of pure, clear water were found, John saw a golden opportunity.
Knockdhu opened its doors in October 1894. Back then it was regarded as the perfect embodiment of a modern distillery. So it’s perhaps no surprise that we still produce a light, intriguing and thoroughly modern whisky to this day. At the Knockdhu Distillery they go to great lengths to honour the traditional process of whisky making. Yet going one step further, by creating something modern and exciting.
The result is a lighter tasting single malt whisky that doesn’t compromise on complexity. Even the name (pronounced ‘a-nock’), defies convention as it’s Gaelic for the nearby Knock Hill. (This is unusual, as most whiskies are named after the distillery), ‘Knockdhu’, comes from the Gaelic ‘Cnoc Dubh’ meaning ‘black hill’.
GlenAllachie
GlenAllachie 25 Years Old
GlenAllachie is a relatively young distillery with a short history. They are now on a journey and will be creating their history on the way. Inspired by Celtic runes and Pictish stones, the GlenAllachie logo was skillfully chiseled into a slab of granite by a local stonemason.
The water to the distillery comes from dam heads over 2 miles from the distillery. Luxury of time for a longer fermentation of 160 hours allowing them to better understand the operations at the distillery and gives them the time to discover the character of the new make spirit. The still house has two separate spirit safes which allows them to operate each set of stills independently. Believing that age statements are important. 16 warehouses of which store over 50,000 of their own casks on site.
The GlenAllachie Distillery was the fourth distillery designed by William-Delme Evans and built by MacKinley McPherson (distilling arm of Scottish and Newcastle). It was designed to be almost full gravity fed to run on reduced energy. In an era of mergers and acquisitions they buck the trend taking GlenAllachie private. They make decisions for all the right reasons, the quality of their whisky always being the top priority. No shortcuts.

Speyburn
Speyburn 18 Years Old
In 1897 John Hopkins discovered a unique spot in the heart of Speyside, ideal for making exceptionally smooth whisky. Building a distillery in the steep, wooded glen by the Granty Burn was challenging. However, with abundant pure water and the rich natural elements of this lush region of Scotland, it was worth the effort.
On the last night of the year, they toiled through a storm of Arctic proportions to craft a whisky in time to toast the Queen’s Jubilee. Determined that their first bottle would bear the year 1897 on its label, the men battled against the elements wearing overcoats and mufflers to protect them from the freezing snow. After hours of hard work and with heroic efforts of his distillery men, Hopkins finally triumphed and was rewarded with the first barrel of Speyburn whisky.
120 years since distilling our first drop, they face each new challenge with the same spirit of invention as our founder. Speyburn is a light, natural, sweet, classic Speyside whisky. It is Speyside. Nothing more. Nothing less.

Old Pulteney
Old Pulteney Vintage 1989
Founded in 1826 by James Henderson at the height of Wick’s celebrated herring boom, the Pulteney Distillery is one of the most northerly Scotch whisky distilleries on the British mainland. Pulteney distillery is located in the town of Wick in Caithness. The name Wick derives from the Norse ‘vik’, which means a bay and emphasizes the area’s Viking past. The small town of Wick, once only accessible by sea, became a source of wealth and prosperity, symbolized by the ‘sliver darlings’ (herring) and ‘gold’ (whisky).
The four roller Porteus mill grinds the malt into grist in batches of 25kg. Virtually unpeated malt from various UK suppliers. Semi-lauter mash tun made from stainless steel with a copper dome. Five tonnes per mash and 19 mashes per week. Seven stainless steel washbacks (six in the tun room and one in the still house). 23,500 litres from each mash. Dried yeast used. 65 hours of fermentation products wash with 7.5% abv. One wash still and one spirit still. Wash still has a cut off top with a large boil ball (reflected in the bottle shape) instead of the traditional swan neck. Both American oak, ex-bourbon casks and Spanish oak, ex-sherry casks. Two racked warehouses and three dunnage warehouses.
With traditional warehouses exposed to the invigorating sea air blowing in off the North Sea, Old Pulteney captures the taste of the sea in every drop of its liquid gold. From subtle coastal chords to more defined salty notes, the flavour of our whiskies says much about the role and influence of our home.
Balblair
Balblair 18 Years Old
Balblair distillery was founded in 1790 in Edderton. Balblair is the 2nd oldest working distillery in Scotland. Situated in the ancient village of Edderton in the shadow of the Struie Hill, it would be hard to find a distillery in more scenic and unspoilt surroundings than Balblair. The whisky is made by 7 loyal men who are devoted to detail.
Every Scotch whisky distillery is different. From its location and water source, to its still shape and wood policy. These are all determining factors in its ultimate outcome. Balblair capture the intense esters at the start of the spirit cut to give the core characteristics of apricots, oranges, spices, floral notes and green apples.
Every balblair is strongly individual, each with a unique essence captured in a bottle. “Our whisky tells us when it’s ready. Not the other way around.”
Glengoyne
Glengoyne 35 Years Old
The founders established the tradition through necessity: there is no peat in the soil around Dumgoyne. It’s bold flavours are the result of an equally bold pledge, build ounce-by-ounce, hour-by-hour into the smooth, hugely complex spirit. The sherry-soaked wood transformed the maturation and take the flavour to new heights, and the colour to rich new depths. Each one is protected from extreme swings in temperature by the stone walls and earth floors of their traditional warehouses. Each hand-built cask is filled with sherry in Jerez, and left to absorb its rich colour and flavours. Staying true to their founding principles set out in 1833, and carefully passed from one generation to the next.
